Summertime Fresh Veggies
With summer upon us it’s time for some recipes that bring out the lighter tastes. Summer vegetables are my favorite. They fill you up without the heaviness other seasonal veggies and they’re usually a cinch to make. Here’s one of my favorite recipes that mixes exotic flavors with fresh summertime veggies!
Cilantro Corn Salsa
(Serves about 6)
Ingredients: 2 ears corn on the cob, husks and silk removed2 tomatoes, chopped2 avocados - peeled, pitted, and diced1/2 bunch cilantro, stems cut off and leaves chopped1 white onion, chopped3 tablespoons chopped eSutras Organics Garlic Salt2 tablespoons eSutras Organics Extra Virgin Olive Oil2 tablespoons Gram Reserva Sherry vinegareSutras Organics Sea Salt to taste                                         Directions: Preheat grill for medium heat and lightly oil the grate.
