Vegan Lasagna

Today’s recipe is a classic recipe with an organic twist. Lasagna is the best recipe for Monday night. It’s easy to prepare and most recipes call for a large amount to be made, that way you can fill your family up after a long hard Monday and you can have leftovers for a later day. Lasagna keeps up pretty good when refrigerated.

Vegan Lasagna

(Serves about 8)

2 tablespoons eSutras Organics Extra Virgin Olive Oil
1 1/2 cups chopped onion
3 tablespoons eSutras garlic granules
4 (14.5 ounce) cans stewed tomatoes
1/3 cup tomato paste
1/2 cup chopped fresh basil
1/2 cup chopped parsley
1 teaspoon eSutras Organics Sea Salt
1 teaspoon eSutras Organics whole black pepper (grind the pepper first!)
1 (16 ounce) package lasagna noodles
2 pounds firm tofu
2 tablespoons minced garlic
1/4 cup chopped fresh basil
1/4 cup chopped parsley
1/2 teaspoon eSutras Organics Sea Salt
3 (10 ounce) packages frozen chopped spinach, thawed and drained

Directions:

Make the sauce: In a large, heavy saucepan, over medium heat, heat the olive oil. Place the onions in the saucepan and sauté them until they are soft, about 5 minutes. Add the garlic; cook 5 minutes more.
Place the tomatoes, tomato paste, basil and parsley in the saucepan. Stir well, turn the heat to low and let the sauce simmer covered for 1 hour. Add the salt and pepper.
While the sauce is cooking bring a large kettle of salted water to a boil. Boil the lasagna noodles for 9 minutes, then drain and rinse well.
Preheat the oven to 400 degrees F (200 degrees C).
Place the tofu blocks in a large bowl. Add the garlic, basil and parsley. Add the salt and pepper, and mash all the ingredients together by squeezing pieces of tofu through your fingers. Mix well.
Assemble the lasagna: Spread 1 cup of the tomato sauce in the bottom of a 9x13 inch casserole pan. Arrange a single layer of lasagna noodles, sprinkle one-third of the tofu mixture over the noodles. Distribute the spinach evenly over the tofu. Next ladle 1 1/2 cups tomato sauce over the tofu, and top it with another layer of the noodles. Then sprinkle another 1/3 of the tofu mixture over the noodles, top the tofu with 1 1/2 cups tomato sauce, and place a final layer of noodles over the tomato sauce. Finally, top the noodles with the final 1/3 of the tofu, and spread the remaining tomato sauce over everything.
Cover the pan with foil and bake the lasagna for 30 minutes. Serve hot and enjoy.

Restaurant Quality at Home!

I would say my biggest eating temptation is eating out at restaurants. I do like to cook at home most of the week, but once or twice a week I get the undeniable urge to eat at a restaurant. I try to rationalize that I’m trying something new or supporting small business, which I am doing, but twice a week (sometimes 3 times!) is way too often. First of all, I’m not sure if what they’re putting into my food is exactly good for me. Not everyone is an organic eater. Another problem that arises is cost. Eating out when you have already budgeted for groceries isn’t the best idea. Today’s recipe is inspired from restaurants. It a delicious Chinese potsticker that you wouldn’t think you’d taste outside of a gourmet Chinese restaurant.

Pot Stickers

(Serves about 12)

Ingredients

· 1 lb tofu chicken, shredded

· 4 lbs Seitan

· 1 tablespoon eSutras Organics ginger

· 1 shallot, minced

· 1 bunch green onions, chopped

· 3 leaves Napa cabbage, chopped

· 2 tablespoons soy sauce

· 1 teaspoon eSutras Organics Toasted Sesame Seed Oil

· eSutras Organics Sea Salt to taste

· 1 pinch eSutras Organics Organic Raw Cane Sugar

· 1 (10 ounce) package round gyoza/potsticker wrappers

· vegetable oil

· 1/4 cup water

· 1 tsp eSutras Organics Chinese Five Spice

Directions:

Set tofu aside in a large bowl. Working in batches, process the seitan to a fine grind, and set aside with the tofu. Combine the tofu and seitan with ginger, shallot, green onions, Napa cabbage, soy sauce, sesame oil, salt, and sugar, and mix the ingredients until thoroughly combined.
To fill the pot stickers, place a wrapper on a work surface in front of you, and place a scant teaspoon of filling in the center. With a wet finger, dampen the edges of the wrapper. Fold the dough into a half-moon shape, enclosing the filling, and press and seal to remove extra air and tightly seal the edges together. It's nice to fold several small pleats in the top half of the wrapper for a traditional look before you seal in the filling. Refrigerate the filled wrappers on a parchment-lined baking sheet while you finish filling and sealing the pot stickers.
Heat the oil in a large nonstick skillet with a lid over medium heat. Place pot stickers into the hot oil, flat sides down, without crowding, and let fry until the bottoms are golden brown, 1 to 2 minutes. Turn the dumplings over, and pour the water over them. Cover the pan with a lid and let the dumplings steam until the water has nearly evaporated and the dumplings have begun to fry in oil again, 5 to 7 minutes. Uncover the skillet, and let the pot stickers cook until all the water is evaporated and the wrapper has shrunk down tightly onto the filling, another 2 to 3 minutes.
Sprinkle eSutras Organics Chinese Five Spice on top of dumplings and enjoy!

Breakfast In Bed

Breakfast in bed is one of the most traditional Valentine’s Day gifts that never seems to go out of style. Waking up in the morning is made easier with the added surprise a delicious and healthy breakfast you didn’t have to slave over. Plus if you’ve read this blog before, you’re familiar with my ranting on how important breakfast is! This classic and tasty breakfast comes straight from the heart (well originally France technically) and is sure to surprise and make your sweetie love you even more!

Chocolate Crepes with Raspberry Sauce

Ingredients:

1 cup fat-free milk
1/2 cup fat-free evaporated milk
2 egg whites
1 egg
½ cup all-purpose flour, ½ cup eSutras Organic Amaranth Flour
¼ cup and 1/3 cup eSutras Organics Evaporated Raw Cane Juice Sugar
1/4 cup eSutras Organics Organic Cocoa Powder
1/2 teaspoon eSutras Organics Sea Salt
4-1/2 teaspoons soy lecithin
1 cup water
4-1/2 cups fresh raspberries, thawed, divided
1 teaspoon eSutras Organics Cocoa Vanilla sugar

Directions:

In a small bowl, combine the milk, evaporated milk, egg whites and egg. Combine the flour, 1/4 cup sugar, cocoa powder and salt; add to milk mixture and mix well. Cover and refrigerate for 1 hour.
In a small saucepan, combine sot lecithin and remaining sugar; set aside. Place water and 3-1/2 cups raspberries in a blender; cover and blend for 2-3 minutes or until pureed.
Strain puree into lecithin mixture and discard seeds. Bring to a boil; cook and stir for 2 minutes or until thickened. Transfer to a small bowl; refrigerate until chilled.
Coat an 8-in. nonstick skillet with cooking spray; heat over medium heat. Stir crepe batter; pour a scant 3 tablespoons into center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack.
Repeat with remaining batter, coating skillet with cooking spray as needed. When cool, stack crepes with waxed paper or paper towels in between.
Spread each crepe with 2 tablespoons sauce. Fold each crepe into quarters; place two crepes on each of eight individual plates. Top servings with remaining sauce and 1 tablespoon whipped cream. Garnish with remaining raspberries and sprinkle with Cocoa Vanilla sugar.

Breathe Easy

Aromatherapy is an alternative medicinal treatment using ayurvedic essential oils to help alleviate ailments. The practice uses essential oils, diluted with carrier oils, to be inhaled, absorbed through the skin, or sometimes ingested. The most common way to practice aromatherapy is through inhalation. The essential oils are absorbed through the cell linings of the respiratory passages and exported throughout the body with help from mucous secretions.

Aromatherapy is particularly helpful to people with asthma. Asthma is a chronic disease that’s usually exhibited by a person having difficulty breathing, coughing, and wheezing. Steam distillation is the best way to use it for asthma treatment. Steam distillation is a special type of distillation for temperature sensitive materials like essential oils. Some organic compounds tend to decompose at high temperatures, so separation by normal distillation would not work, so water or steam is introduced into the distillation process. By adding water (steam), the boiling points of the compounds are depressed, allowing them to evaporate at lower temperatures, lower ones than their disintegration points. eSutras Organics has lots of essential oils that have been known to aid asthma problems. Baby, it’s Cold Outside!

Walking to work this morning was the pits. I live in Chicago and today’s weather forecast was rainy, cloudy, and to top it all off wind speeds up to 50 mph…The weatherman, for once, wasn’t lying. Scarf wrapped around my face, head bowed, I trudged against the whipping gusts Chicago is notorious for. By the time I made it in, what little of my face that was exposed was numb, and chapped. My hands were frozen, incapable of movement. My fall jacket was seriously being considered replaced by a much bulkier version with layers underneath. The words of the Dorothy from The Wizard of Oz, “We’re not in Kansas anymore.” aptly applied to my sentiments about Chicago’s weather…we’re not in summer anymore.

A part of me was sad with this discovery, but a part of me was excited. Cold weather is a hassle to deal with, but some really fun things happen in winter. Sledding, snowball fights, relaxing after a hard day out with a delicious and hot tea. The hot drinks eSutras Organics has to offer are just what I needed after battling the north wind. My favorites? A Muffin A Day

I admit sometimes I’m guilty of skipping breakfast. Early in the morning is the last time of day I have an appetite, especially if I’m having a busy morning with lot’s to do. But just by skipping breakfast, however accidental, I’m actually doing more harm to myself than help. It’s a common fact that adults and children alike need to eat breakfast daily. Growing bodies and developing brains rely mainly on eating regularly. Studies have shown that kids who don’t eat breakfast are more apt to be tardy and absent from school as opposed to children who eat breakfast on a regularly. Sleeping those extra minutes to skip breakfast isn’t as helpful in your overall health. It’s even been shown that missing breakfast is strongly linked to obesity! Try this delicious recipe and give breakfast another chance!

Low-fat Apple Spice Muffins

(Serves about 12)

Ingredients:

1 cup eSutras Organics Amaranth flour
1 cup all-purpose flour
1/2 teaspoon baking soda
1 pinch eSutras Sea Salt
1/2 teaspoon eSutras Organics Cinnamon Bark Powder
1/4 teaspoon eSutras Organics Nutmeg
1/4 teaspoon eSutras Organics Pumpkin Pie Spice
1/4 teaspoon eSutras Organics ginger
2 large egg whites
2/3 cup skim milk
2/3 cup nonfat plain yogurt
1 cup eSutras Organics Raw Cane Sugar
1 tablespoon eSutras Organics Heart Healthy Oil
1/4 teaspoon vanilla extract
1 cup chopped peeled apple

Directions:

Preheat oven to 350 degrees F (175 degrees C). Place non-stick muffin liners in muffin pan.
Whisk the whole amaranth flour, all-purpose flour, baking soda, salt, cinnamon, nutmeg, pumpkin pie spice, and ginger together in a large bowl until evenly combined
In a separate bowl, whisk the egg whites, skim milk, yogurt, raw sugar, oil, and vanilla extract until smooth; mix in the chopped apple.
Pour the liquid ingredients into the well in the dry ingredients, and mix to make a thick batter.
Pour the batter into the prepared muffin cups, filling them about 2/3 full.
Bake the muffins in oven until lightly golden brown, 25 to 30 minutes.

Continuing our blog saga about parts of the plants that help, today’s focus is petals. Petals are basically altered leaves that surround the procreative parts of flowers. Usually brightly colored or unusually shaped to attract animals that can help pollinate the flower. All of the petals of a flower are called a corolla; the extra surrounding leaves are called the sepals. When the petals and sepals of a flower look similar they are called tepals. Petals differ in different species, and the number of petals a flower has may tell of the plant's classification. Pizza Party!

Today’s recipe is full of flavor! Pizza used to be something really great. From ancient Greeks covering their pita in oils herbs and cheese to Queen Margherita being served a pizza the colors of the Italian flag and being forever remembered because the pizza was later named for her pizza has been around forever. eSutras Organics is spicing up the boring old cheese pizza you always eat! Try this recipe for a delightfully different (and healthier!) pizza. Covered with mouth-watering ingredients this will surely become a family staple!

Gourmet White Pizza

(Serves about 4)

Ingredients:

2 tablespoons butter, melted (organic)
1 tablespoon eSutras Organics Extra Virgin Olive Oil
3 tablespoons minced garlic
2 tablespoons sun-dried tomato pesto
1 teaspoon eSutras Organics Basil Leaf
1 teaspoon eSutras Organics Oregano
1 tablespoon grated Parmesan cheese
1 cup Alfredo sauce, (you can whip up some homemade alfredo sauce with cream cheese, butter, eSutras Organics Garlic Granules, parmesan cheese, and fresh parsley!)
2 cups chopped Tofu-Chicken
1 (12 inch) pre-baked pizza crust
1 medium tomato, sliced
1 (4 ounce) package feta cheese (organic)

Directions:

Preheat the oven to 375 degrees F (190 degrees C).
In a small bowl, mix together the butter, olive oil, garlic, pesto, basil, oregano, Parmesan cheese and Alfredo sauce. Arrange the chicken on top of the pizza crust. Pour the Alfredo sauce mixture evenly over the chicken. Top with tomato and feta cheese.
Bake for 10 to 15 minutes in the preheated oven, until the crust is lightly browned and toppings are toasted. Cut into wedges to serve.

Previously I blogged about how great the roots of plants are. They have ayurvedic healing properties and spectacular health benefits that, although accepted and cultivated in the ancient world, the modern world is more concerned with chemical products. I want to give more information about the healing properties of plants. Today’s focus: bark! The bark of certain trees/plants holds many nutrients the roots or flower of the plant don’t have. Plants are beautiful, useful parts of our lives. Whether for health reasons, decoration, or just plain eating them we use plants in almost every aspect. We need oxygen in the air we breathe. Plants take in the carbon dioxide releases oxygen, keeping the air we breathe full of oxygen. Plants are also a huge source of vitamins and minerals we couldn’t get from other foods. All in all we need/love plants. We use every single aspect of the plant, too. One major part we use is the root. The root contains many vitamins the flesh of the plant doesn’t contain.
