Carrot Cumin Soup Recipe

Aisha, I thought I would send you my carrot soup recipe that I used our cumin in!   2 tablespoons of butter 1 cup of chopped white onion 1 pound of carrots peeled and chopped 2 1/2 cups of vegetable broth 1 1/2 teaspoons of eSutras ground cumin seeds 1 tablespoon of eSutras light agave 1 teaspoon fresh lemon juice 2 cloves of garlic 1/2 cup of soymilk Yougurt and fresh cilantro as garnish Preparation Melt butter in a large saucepan over medium heat. Add the onion and garlic, saute for 2 minutes until tender. mix in carrots. Add broth; bring to a boil. Reduce heat, cover, and simmer until carrots are very tender, about 20 min. Remove soup from heat, slightly cool, and puree with a stick blender until smooth. Whisk in agave, lemon juice, and cumin. Season with salt and pepper. Ladle soup into bowls. Drizzle fresh low-fat yougurt over and add sprigs of cilantro on top. Serves 4. I'm going to try to attempt a gazpacho recipe with our cumin seeds this week...
