Last week at our office meeting our wonderful owner, Aisha Bauer surprised us with a delicious treat!!! Her very own Walnut Wheat Cake. The cake had cranberries and raisins which gave it the perfect sweetness. The walnuts and sunflower seeds gave it a nutty edge.
This cake kinda reminded me a of “loaf” type bread, a nice comfort food or snack. This cake could be enjoyed with cocoa or a hot tea.
- 300g whole meal wheat flour (I used Bob Redmill)
- 1 teaspoon of bicarbonate of soda
- 100g sugar
- 1 packet of walnut pieces and sunflower seeds (I used 200g mix but make it as nutty as you like!)
- 1 cup of soy milk (or enough to mix to a good consistency - the wetter you make it, the moister the cake in theory)
