Hope everyone had a great holiday! We know how a big holiday takes a lot out of you, so this Monday's recipes is a very simple and healthy dish. It's packed full of flavor, but not too much hard work! An easy side dish that will compliment any meal. Today's recipe is Okra with Cumin and Coriander. Another great thing about this recipe is that it's completely vegan, so it'll please the more food conscious members of your family. Eat up!
Okra with Cumin and Coriander
(Serves about 4)
1 small onion
16 oz (225g) okra
2 fresh tomatoes
1 tspn of eSutras whole cumin seeds and
1 tblspn of eSutras ground coriander
1 tspn eSutras sea salt
2 tblspn of eSutras Sesame seed Oil
7 ounces of water
Directions:
1.) Fry chopped onion in 2 tbsp oil for 5 minutes.
2.) Top and tail okra and add to pan with 1 tsp salt, 1 tsp cumin seeds, 1 tbsp coriander.
3.) Mix well and cook gently for 5 minutes.
4.) Add 7 fl. oz. water and simmer for 20 mins. Add tomatoes, roughly chopped.
This is great to serve as a side, or if you want a lighter meal serve over rice. A truly delicious and unique dish everyone will enjoy!
