Today is Monday which means recipe day! Over the weekend this blogger tried a new restaurant. It was vegetarian Mexican and while the price was great the taste was less than desired. So here’s a recipe that was inspired by this dining experience…except this recipe is made much better by a secret ingredient…eSutras Organics!

Soy Tacos

(Serves about 4)

Ingredients:

· 1 tblspn eSutras Organics Nourishing Oil

· 1 medium onion, chopped

· 2 cloves garlic, finely chopped

· 1 medium green bell pepper, chopped

· 1/2 tspn eSutras Organics Ground Cumin

· 1 tspn eSutras Organics Oregano

· 1 tspn eSutras Organics Chili Powder

· 1/2 cup fresh cilantro leaves

· 12 oz. Soy Crumbles

· 2 cups prepared salsa

· A pinch of eSutras Organics Sea Salt, to taste

· A pinch of eSutras Organics (ground) Black Pepper, to taste

Directions:

1. In a large skillet, heat oil over medium heat. Add onion, garlic and green pepper and sauté until onion is translucent, about 4 minutes. Add cumin, oregano and chili powder; sauté until fragrant. Add cilantro, soy crumbles and salsa. Bring to a boil, reduce heat and simmer for 3 minutes. Season to taste with salt and pepper.

2. Serve in taco shells or soft flour tortillas and add your favorite toppings, such as shredded lettuce or chopped tomatoes.

Bon Appétit!
