will be celebrating a different culture. Most people know, but for
those of you who don’t the religion of Judaism celebrated Passover in
April. Passover is one of the most widely celebrated Jewish religions in
the world. It’s a week-long festival celebrating the story of Exodus
told in the bible. One food commonly used during this holiday is matzo, unleavened
bread made solely from flour and water. It is continually worked from
mixing through baking, so that it is not allowed to rise. The Torah says
that it is because the Hebrews left Egypt with such haste that there
was no time to allow baked bread to rise; thus flat, unleavened bread, matzo, is a reminder of the rapid departure of the Exodus. Today’s recipe is for Matzo Brownies. They are a modern take on the old tradition of eating matzo for Passover.
Matzo Brownies
(Serves about 15)
Ingredients:
· 4 eggs
· 2 cups eSutras Organics Raw Cane Juice sugar
· 1 cup butter, melted
· 6 tablespoons matzo meal
· 1 cup eSutras Organics Dark Dutch Cocoa Powder
· 4 ounces eSutras Organic Vegan Dark Semi-Sweet Chocolate Chips, melted
· 1 tablespoon butter, softened
· 1/8 teaspoon water
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
- In a medium-size mixing bowl, blend eggs, sugar, and butter. Mix in matzo meal, cocoa powder and walnuts (if desired). Transfer batter to prepared baking pan.
- Bake at 350 degrees F (175 degrees C) for 30 minutes.
- In a small mixing bowl, blend chocolate, butter or margarine and water. Spread over cooled brownies.
