Healthy Lunch Salad
(Serves 2)
Ingredients:
· 1 tablespoon eSutras Organics Extra-Virgin Olive Oil
· 1 tablespoon balsamic vinegar
· 1 teaspoon dijon mustard
· ½ teaspoon eSutras Organics Whole Pepper (ground before using)
· ½ cup chopped tomatoes
· ½ cup chopped onion
· ½ tablespoon chopped cilantro
· 1 orange or 2 clemintines, zested, then peeled and sectioned
· 2 cups leaf lettuce, torn
· 2 tablespoons dried cranberries
· 2 tablespoons walnut pieces
Directions:
1. Make the dressing by whisking together the olive oil, vinegar, mustard, and Clementine zest.
2. Put the lettuce in a large salad bowl and toss with the dressing.
3. Sprinkle the cranberries, Clementine slices, walnuts, onion, tomatoes, and cilantro into the mix and blend well.
4. Sprinkle pepper to taste.
