Try Something New and Different!


Mulligatawny is an Indian soup. It was probably the first Indian dish to go global! The name ‘Mulligatawny’ is a transliteration. It is derived from the Tamil language which literally means black pepper water. It essentially consists of tamarind water seasoned with ground spices like turmeric, pepper, and cumin. The pepper and tamarind combination gives the soup a hot and soothing taste. Mulligatawny has some medicinal qualities to its credit too:
·         Tamarind aids in digestion.
·         Turmeric is known for its numerous health benefits that include, according to the devoted fans of the spice, preventing certain types of cancer and Alzheimer’s disease.
·         Pepper relieves many of the symptoms of cold and congestion. It also soothes a sore throat.
Here’s a great recipe for this classic soup:

Mulligatawny Soup
Ingredients:
·         3 tablespoons eSutras Organics Cumin Seeds
·         3 tablespoons eSutras Organics Coriander Seeds
·         2 tablespoons eSutras Organics whole Black Pepper (ground first!)
·         2 tablespoons Tamarind paste
·         4 to 5 curry leaves
·         1/2 teaspoon eSutras Organics Brown Mustard Seeds
·         pinch of asafetida
·         1/2 teaspoon eSutras Organics Turmeric Powder
·         3 cups water
·         2 teaspoons vegetable oil
·         pinch of eSutras Organics Curry Salt
Directions:
1.       Blend the coriander seeds, cumin seeds, and pepper together. Grinding with a pestle will also do.
2.       Boil the tamarind paste with water and add the turmeric powder, garlic, and ground spices.
3.       Let the water boil for about 8 minutes.
4.       Take a pan and heat the oil.
5.       Add the mustard seeds to the oil.
6.       After the seeds sputter, put in a pinch of asafetida and a few curry leaves.
7.       Mix this seasoning and salt with the broth and your Mulligatawny is ready! Serve hot.
