Weekly Blog Featurette: Recipe Ideas!


Hope everyone had a good weekend! Great news for our loyal blog followers: we're going to be introducing a feature to the blog, and we hope you like it! Starting today, and every Monday hereafter, we're going to be giving you an awesome recipe to try! Of course, these recipes will be chock full of eSutras delicious and nutritious food. Start your week off right with a healthy treat for you family! This week: Nutty Raspberry Muffins. Full of seasonally ripe raspberries, brain boosting pecans, and several eSutras products you'll love.

Nutty Raspberry Muffins
(makes about 12 muffins)

1 cup of spelt flour, 1 cup of eSutras Amaranth flour
2 tblspns of baking powder
3/4 tblspns of baking soda
3/4 tblspns of eSutras cinnamon bark powder
1 cup of chopped pecans
1/2 tspn of salt
8 oz vacuum-packed soft silken tofu
2/3 cups unsweetened soy milk
2/3 cup of maple syrup
1/3 cup of eSutras Heart Healthy Organic cooking Oil
2 tblspns of apple cider vinegar
2 tblspns of vanilla extract
6 oz of fresh raspberries

1.) Preheat your oven the 350° F. Line 12 standard metal muffin cups with paper linings.
2.) Whisk the flour, baking powder, baking soda, cinnamon, salt, 3/4 of your cup of pecans in a large bowl.
3.) Blend tofu, soy milk, maple syrup, oil, vinegar, & vanilla extract in a food processor until creamy.
4.) Stir the tofu mixture into the flour mixture until blended. Fold the raspberries into the mixture as well, but don't mix too hard. Pour the batter equally into the the muffin cups. Sprinkle the remaining pecans on the top of the muffins. Bake for 25-30 minutes.
5.) Let muffins cool for 10 minutes before taking them out of the pan, to completely cool on a cooling rack.
6.) Enjoy!!
