A Muffin A Day



I admit sometimes I’m guilty of skipping breakfast. Early in the morning is the last time of day I have an appetite, especially if I’m having a busy morning with lot’s to do. But just by skipping breakfast, however accidental, I’m actually doing more harm to myself than help. It’s a common fact that adults and children alike need to eat breakfast daily. Growing bodies and developing brains rely mainly on eating regularly. Studies have shown that kids who don’t eat breakfast are more apt to be tardy and absent from school as opposed to children who eat breakfast on a regularly. Sleeping those extra minutes to skip breakfast isn’t as helpful in your overall health. It’s even been shown that missing breakfast is strongly linked to obesity! Try this delicious recipe and give breakfast another chance!

Low-fat Apple Spice Muffins

(Serves about 12)

Ingredients:

  • 1 cup eSutras Organics Amaranth flour
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 pinch eSutras Sea Salt
  • 1/2 teaspoon eSutras Organics Cinnamon Bark Powder
  • 1/4 teaspoon eSutras Organics Nutmeg
  • 1/4 teaspoon eSutras Organics Pumpkin Pie Spice
  • 1/4 teaspoon eSutras Organics ginger
  • 2 large egg whites
  • 2/3 cup skim milk
  • 2/3 cup nonfat plain yogurt
  • 1 cup eSutras Organics Raw Cane Sugar
  • 1 tablespoon eSutras Organics Heart Healthy Oil
  • 1/4 teaspoon vanilla extract
  • 1 cup chopped peeled apple

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Place non-stick muffin liners in muffin pan.
  2. Whisk the whole amaranth flour, all-purpose flour, baking soda, salt, cinnamon, nutmeg, pumpkin pie spice, and ginger together in a large bowl until evenly combined
  3. In a separate bowl, whisk the egg whites, skim milk, yogurt, raw sugar, oil, and vanilla extract until smooth; mix in the chopped apple.
  4. Pour the liquid ingredients into the well in the dry ingredients, and mix to make a thick batter.
  5. Pour the batter into the prepared muffin cups, filling them about 2/3 full.
  6. Bake the muffins in oven until lightly golden brown, 25 to 30 minutes.
