One thing nice weather always brings about is BBQs. Chicago has had an unseasonable warm front the past couple weeks and a few eager beavers went into BBQ mode. A great and classic side dish to bring to a BBQ is coleslaw. Here’s a recipe that give coleslaw a spicy and organic kick!
Spicy Slaw
(Serves about 8)
Ingredients:
· 1 head of cabbage
· 7 oz. sweet corn (strained)
· 1 cup shredded Cheddar cheese
· 2 fresh jalapeno peppers, seeded and chopped
· 1/2 cup chopped fresh cilantro
· 1 cup cottage cheese, parsley, 1 tspn pepper
· ½ cup chopped and sautéed red peppers
· 1/4 teaspoon eSutras organic ground cumin
· 1/4 teaspoon eSutras Organics puffed coriander
· 1/2 teaspoon eSutras Organics garlic powder
· 1 lime, juiced
Directions:
1. Sauté red pepper until soft.
2. In a large bowl mix chopped cabbage, corn, cheese, jalapenos, cilantro, cumin, coriander, and garlic powder.
3. Mix in a separate bowl cottage cheese, parley, pepper, and lime juice until creamy.
4. Mix dressing and cabbage-mix in a large bowl and refrigerate.
5. Serve!
