Chicago-Style Deep Dish Vegan Pizza



eSutras Organics headquarters is located in the windy city of Chicago. And as everyone knows Chicago is notorious for A.) Our avid sports enthusiasts B.) Our white-out winter snow storms and last but certainly not least C.) Our one of a kind pizza.
New York has their version, but this blogger will always choose a slice of deep dish over the scrawny New-York style any day! So today as an ode to my favorite city, I'm posting a Monday Recipe that's Chicago and eSutras Organics approved. Chicago-style Vegan Pizza!
I'll give you instructions on how to make the crust as well, so your entire pizza is one-hundred percent organic!

Chicago-Style Deep Dish Vegan Pizza (Makes approx. a 10' pizza, serves 5)
Dough:
1 cup of flour
1/2 a cup of eSutras Organics Amaranth Flour
1 tsp. active dry yeast
3/4 tsp. eSutras Garlic salt
3/4 tsp. brown sugar
5 tsp. eSutras Heart Healthy Cooking oil
1 tsp. eSutras Organics Extra Virgin olive oil
6 Tbs. warm water
Proof the yeast in the warm water and mix all ingredients just enough to incorporate. Knead only for a minute or two, a short knead is best for the crust. Let the dough rise for 4-8 hours ( it won't rise much).
When ready, roll the dough out thin and then fold the dough in quarters, letting it rest a bit before rolling it out again (it should be around 14" in diameter).

Sauce:
6 whole fresh tomatoes, pureed
2 cloves of garlic, minced
1 tsp. eSutras Organics oregano
1 tsp. eSutras Organics basil leaf
1 tsp. brown sugar
1 tspn red pepper flakes
Simply mix the ingredients.

Toppings:
8 oz. of cremini mushrooms, sliced and roasted for about 10 minutes to remove moisture
10 oz. of frozen spinach (defrosted and thoroughly drained)
1 green pepper, sliced into rings
6 oz. black olives, sliced
(You can add any topping you'd like, but these are the ones I like best!!)
For cheese use about 8 oz. of shredded soy mozzarella.

Directions:
1. Immediately put it into a lightly oiled 10" deep dish pan, pressing to make the edges rise to nearly the top of the pan. Spread the sauce generously on the dough, place the cheese on next, and lastly add the toppings. Do this all very quickly as to not let the dough rise while it's in the pan.
2.) Pre-heat the oven to 450 degrees for 15 mins. Bake at 450 degrees for about 30-35 minutes
3.) Let it cool for about 10 minutes, slice and enjoy!
